GRAPE: Shiraz
REGION: New South Wales, Hunter Valley
Deep garnet with a violet sheen, aromas of blackberry, black cherry, cracked pepper and lifted floral tones. Subtle notes of graphite, earth and spice add complexity. The palate is beautifully composed supple yet structured,-showing dark berry fruit, red plum, pepper. The tannins are fine and savoury, carried by refreshing acidity and subtle oak influence. The finish is long, elegant and mineral, capturing both varietal purity and the classic Hunter savouriness.
FOOD PAIRING: A wonderful match for charcoal-grilled sirloin, lamb cutlets with rosemary, duck breast with cherry glaze, or a hearty mushroom and thyme ragù, charcuterie boards, or aged cheddar where the wine’s spice and earthiness shine through.
